Unity is proving quite controversial - see e.g. https://lists.ubuntu.com/archives/sounder/2011-March/016007.html et seq. For at least the time being (meaning Natty - who knows what's happening after that), the gnome desktop remains an option at login ("Classic" session type). As it's built on the Gnome stack, even if ubuntu was to drop the gnome desktop in future, it'll surely remain trivially available.
As at least one person on that list said, I'm not passing judgement on Unity until 11.04 is actually released.
